Recipe: Lemon Chicken Thighs

I’ve been experimenting with different meals lately, and last night we had these yummy chicken thighs.  I highly recommend as an alternative to your usual boneless skinless chicken breast.  The flavors do a lot to spice up the chicken, and the dark meat is good for your too!

Lemon Chicken Thighs

Ingredients:

1-1.5 lemons (depending on how strong a flavor you want)
salt and pepper
oregano
dried basil
2 chicken thighs

Step 1: Preheat oven to 400.

Step 2: Slice lemon and put two slices on a pre-greased cast iron pan.

Step 3: Season chicken thighs and place on top of lemon slices.

Step 4: Bake in oven until skin is crispy and juices run clear – about 45 minutes to 1 hour depending on the thickness of your chicken.
