It’s Friday! Hooray! Hubs and I had a random, but great night last night. I got home at a decent hour, walked the dog, made a delicious dinner and spent some time getting to know our neighbors. It was so nice to be outside in the cooler weather. Our dinner last night was such a great celebration of spring, I have to share.
I’ve been growing this gorgeous basil plant for a couple of weeks. It started indoors, and as the weather has warmed up, I moved it outside. Last, night I used it to make pesto, and it was absolutely delicious. The basil was incredibly flavorful and a wonderful celebration of spring on our dinner plates. Here’s the recipe:
Basil Pesto Sauce
1 cup basil leaves, washed and stems removed
1/4 cup Parmesan cheese
1/4 cup plain almonds
1/3 cup olive oil
2 garlic cloves
salt & pepper to taste
Directions:
Throw everything into a food processor and pulse until you are satisfied with the consistency.
It’s as easy as that! And so tasty. I chose to use our pesto to season our chicken last night. Towards the end of the cooking time, I spooned the pesto onto the chicken breasts, allowing the warmth of the cooked chicken to heat up the pesto (and melt the cheese to the greatest, gooey-ist consistency!).
