Hooray for Friday! I am so glad this week is over, anyone else agree?
I have enjoyed working with the produce we have made in our garden this summer. Refrigerator pickles have been one of my favorite uses for our cucumbers. These pickles are delicious and healthy. Plus, they keep for a while, if you’re like me and have a lot of cucumbers sitting around that you need to use up. Here’s the general idea of what I did:
cucumbers (1-4 depending on size)
vinegar (I used apple cider vinegar)
dill (fresh is preferred)
– Slice cucumbers into desired bite sized pieces
– Place dill, garlic, salt and pepper in the bottom of a jar. Add cucumber slices. Layer dill, garlic, salt and pepper with cucumber slices until the jar is full.
– Pour 1/2 vinegar, 1/2 water mixture over the contents of the jar until it reaches the top.
– Refrigerate for 1-7 days and then enjoy.
The great thing about this recipe is that it can be completely customized to fit your tastes. If you like bread and butter pickles, add sugar. If you like a really strong pickle, don’t dilute the vinegar. Enjoy 🙂
