Recipe: Brownies

Good morning!  Hooray for the weekend!  I am so excited to have a little break from this week.  I’ve gotten a lot done at work, but whew I need a break.  Remember when I talked about those brownies earlier this week?  Well, I wanted to share the recipe with you.  These brownies are gluten free, grain free and have zucchini in them for some extra vitamins 🙂  Oh, and they don’t taste like they are any of those things – even Hubs approved and he turns his nose up at most gluten free, zucchini added items.

 

Gluten-Free, Grain-Free Zucchini Brownies

1.5 cups grated zucchini

1 cup almond butter

1 teaspoon baking soda

1 teaspoon cinnamon

1 teaspoon vanilla extract

2 eggs

1.5 cups chocolate chips

2 tablespoons cocoa powder

 

– Preheat oven to 400

– Combine all ingredients by mixer

– Pour batter in a greased 8×8 baking dish

– Cook for 35 minutes or until a toothpick comes out clean

– Enjoy 🙂
